Chef Luke has shared this recipe for delicious lemon curd.
Ingredients:- 5 egg yolks
- 1 cup sugar
- 4 lemons, zested and juiced
- 0.25 pound cold cubed butter
- Combine egg yolks, sugar, lemon juice and lemon zest
- Stir constantly over a double boiler on medium heat until thick, for about 30-40 minutes. Do not overheat.
- Turn off the heat and whisk in the butter a bit at a time until completely melted
- Strain and let cool before serving
